In ancient times Val Badia in the Dolomites was only accessible by foot, because it was an isolated territory which was difficult to reach. The lack of foreign influences led to an isolated lifestyle where simple ingredients deriving from their own agricultures were used for cooking. To be mentioned amongst the most popular dishes are the barley soup, the Tutres (type of pancakes filled with curd, chive, salt and onions), and some pastry like the buckwheat cake, the apple strudel or Krapfen.
